A true find from Down Under. Hard to believe, but the vines for this wine were almost uprooted. The very old plot was yielding only meager harvests, and no one was willing to pay for the exceptional grapes – until Jaysen Collins discovered this treasure. His decisive intervention saved the vineyard – at the very last minute, or, as they say in English, "at the eleventh hour." A stroke of luck, because otherwise this magnificent wine wouldn't exist today. This single-varietal Shiraz is produced as naturally as possible, without intervention and using wild yeasts. It has aromas of plum, licorice, and pepper, and compared to other Barossa wines, it is rather delicate in style, without sacrificing power and fruit.
