Seasonal Rum Sherry Cask

This rum is 60% from Trinidad and 40% from Barbados. The batches initially mature for five years in their home countries in bourbon barrels. Upon arrival in France, in the Charente region, they are aged for a further 12 months in used cognac casks. The final touch is added during three months in Pedro Ximénez sherry casks, which impart this rum with its rich and surprising flavor profile. Its aroma reveals pronounced notes of red fruits and candied orange, enveloped by elegant wood notes and light tobacco leaves. On the palate, it is well-balanced and harmonious with flavors of fruit compote, fresh sour cherries, and subtle spices. The finish lingers with sweet candied fruits and a touch of sherry. A delight on its own, with tarte Tatin and vanilla ice cream, or with a cigar. Saison Sherry Cask, the latest creation from "Master Blender" Jérôme Tessendier, is a unique rum with Caribbean terroir and a Spanish finish. Completely without added sugar or caramel.
