Saint-Saphorin rouge Baillival 2020, 70 cl

The Gamay, sourced exclusively from the beautiful Saint-Saphorin vineyards, blends here with a touch of Pinot Noir. A relatively long maceration and subsequent skin contact after fermentation give the wine a solid structure. The Gamay and Pinot Noir are partially aged in new oak, but always with the aim of avoiding overpowering the wine's character. The nose remains fruity, characterized by small fruits and wild berries; the texture is soft and silky, underpinned by a pleasant freshness and perfumed with notes of licorice. A magnificent Saint-Saphorin, full of harmony.
