Fun fact: In Sussex, in southern England, the vines grow on the same soils as Champagne – the ancient limestone of the sea runs beneath the English Channel. Nyetimber was among the pioneers of sparkling wine in England, and today its wines are world-famous. Nyetimber's winemaker, Cherie Spriggs, is also the first person outside of Champagne to ever win the title of "Sparkling Winemaker of the Year." This sparkling wine tantalizes the nose with apple, citrus, blossoms, brioche, and honey. On the palate, it's straightforward with fine bubbles, lively acidity, and a silky texture. Perfect on a Sunday morning with Eggs Benedict. But it also pairs beautifully with smoked salmon and puff pastry, sushi, sashimi, and dim sum.
