Keith Bonnington, the founder of The Whisky Cellar, admits he has a fondness for a good old single grain whisky. He has sampled quite a few distilleries, most notably North British in his hometown of Edinburgh. This is the oldest North British he has bottled to date: a 33-year-old whisky matured in a refill bourbon cask. This extended maturation has produced aromas of white chocolate, biscotti, and coconut. On the palate, the biscotti flavors reappear, mingling with golden rum, allspice, tangy lime zest, and caramel cream. The finish reveals sweet spices, salted butter, and caramelized coconut wafers.
