Les Sentius d'en Joan Bta. Domènech 2008, 75 cl

Les Sentius is made entirely from grapes grown on very old "Carinyena" vines planted in 1950 at an altitude of 630 meters. The resulting low yields (only three vines are needed for one bottle) give the wine concentrated fruit intensity, complexity, and a long, aromatic finish. Even upon pouring, the wine releases a highly intense bouquet of spicy and fruity aromas such as Amarena cherries, aronia berries, mocha, fine incense, sultanas, leather, and dried wildflowers. The complex array of aromas and flavors continues to unfold with aeration. On the palate, the wine is characterized by its elegance, finesse, and full-bodied aromatics. It is balsamic and sensual, with aromatic notes reminiscent of pepper, plums, smoked bacon, Mediterranean herbs, and damp slate. We recommend decanting the wine about an hour before serving. We would especially enjoy it with paella catalana or a Spanish bean stew with chorizo.
