L'Ultime is the result of Jean-Michel Stephan's (co-founder of the French natural wine movement) decades of experience and his lifelong pursuit of his vision: producing impeccable wines without any additives such as SO2, etc., wines that radiate a special balance and energy. This cuvée has intense aromas of raspberry drops, blueberry jam, cassis liqueur, and licorice. On the palate, it is lean with slightly rustic tannins that give it structure. Dark, slightly tart aromas reminiscent of sloe and matchsticks are accompanied by a fine astringency. A perfect match for rack of lamb, turkey with cranberry sauce, or even beetroot carpaccio with hazelnut oil. We recommend decanting the wine or opening it a few hours before serving.
