Côteaux de Bassenon 2019, 75 cl

This blend of Syrah, Viognier, and the once almost forgotten Serine grape variety, revived by Stéphane Bassenon, is dark and aromatic: smoke, graphite, and freshly tanned leather set the olfactory tone. After a little aeration, dark blackberry aromas and cocoa come to the fore. On the palate, it is dense but not heavy, its tannins enveloping the dark fruit core. Notes of dark chocolate and sweet tobacco join the mix. An immense finish is accompanied by a saline note and invigorating acidity. Decanting the wine before serving reveals even more complexity. Be adventurous and try it with grilled swordfish with a blackberry and mint jus or with chestnut and sage risotto.
