The aromatic blend of Sauvignon Blanc and Viognier reveals a distinctive and fragrant bouquet reminiscent of dried apricots, ripe, juicy peaches, and yellow, exotic fruits like mango. Floral notes of acacia and freesia resonate alongside, as do hay blossom, white pepper, and tarragon. On the palate, this Tuscan white is fresh and invigorating with a delicate, saline note. Subtle, tart aromas of grapefruit, lime zest, and again, light stone fruits and almonds coat the palate. The name of this cuvée is a play on words, combining "Convent," meaning monastery in Italian, with "with the wind." The golden ears of wheat adorning the label, so typical of Tuscany, sway gently in the breeze.
