Winemaker Jean François Clouet had a grandmother from Bouzy, home of legendary Pinot Noirs, and a grandfather from the Côte des Blancs, world-renowned for Chardonnay. The two grape varieties are blended fifty-fifty to create a vintage Champagne full of character, depth, and elegance. Aromas of citrus, blossoms, and brioche unfold on the nose. On the palate, it is rich, powerful, yet finely chiseled. A lively acidity and a creamy, smooth mousse complete the taste experience. It lends wings to buttery pastries – whether flûtes or vol-au-vents. Also a superb accompaniment to fish or poultry.
